A few weeks back we headed south of the city, to help a pair of friends celebrate their soon-to-be new addition to the world. So many adorable tiny outfits, sweet little toys, and words of encouragement filled the day. Where I come from, no celebration is complete without cake, so I set to whipping up a new version of an old classic. It started with this super moist dark chocolate cake, and could have ended there with a simple icing. Instead, I diced up nuggets of these SALTED CARAMEL BROWNIE BITS to sandwich between the layers, and coated the whole thing in an almond cream cheese icing. It. Was. Divine. I’ve been told it’s not socially acceptable to show up at a friend’s house to eat your own sweets in their closet, but I’d be lying if I said that thought hadn’t crossed my mind.
Post-cake assembly leftovers were taunting me, and I needed a gift for an evening party we were attending for a dear friend. So, I took care of each problem by fitting THREE servings of cake, into a pocketable container. Like a tiny trifle, I layered cake/icing/cake/icing/cake/lotsoficing, and topped it with coffee sprinkles. I hope our pal enjoyed spoonful after spoonful the morning after; fresh cup’o joe in hand, reminiscing about beautiful memories past, and delighted for exciting moments ahead.
