Processed with VSCOcam with hb2 preset A handful of our female friends were going to be traveling a lot this summer, so we decided to host a last-minute, girls-only gathering to catch up before schedules misaligned. After a round of speed cleaning, I had a small burst of energy left to make some nibbles.

A quick spin through the pantry/fridge/garden and I was standing with the makings of flat bread. While extremely similar to whipping up pizza, flatbread is like it’s no fuss, no muss cousin. No perfect shape “kneaded” here! Simply plop your dough onto the pan, stretch it out a bit, chop a few veggies or meats to toss on top and drizzle a bit of olive oil, then into the oven it goes. This beauty had thinly sliced onions, cheddar, mozzarella, and garlic crumbles. Upon exiting the oven, I ripped up a handful of basil and oregano to sprinkle over top, and we were in business.

Next time you find yourself with an hour before guests arrive make this. You’ll have enough time leftover to finally perfect that shoot the moon yo-yo trick you’ve been attempting for years.
